The Gimonnet family have been cultivating vines in Champagne since the 18th century. The official, 28 hectare domaine, was founded in 1935. Having taken over the family estate from his father in 1996, Jean-Luc Gimonnet patiently ages his Champagnes on lees for a minimum of seven years to over 20 for select vintages. This particular Cuvée was disgorged in October 2022, after spending 13 years on the fine lees.
This complex, mineral-driven Champagne exudes finesse with it's fine mousse and toasty, brioche notes. Pair with well with seafood and shellfish, as well as poultry dishes.
