The Tokara winery is nestled among vineyards and olive groves on the crest of the Helshoogte Pass with sweeping views across False Bay and all the way to Table Mountain.

Telos, their flagship wine, is produced in tiny quantities from a single, high-elevation vineyard site. The 2015 vintage was one of the driest and earliest on record, producing a small, concentrated crop with exceptional fruit quality and structure. It's predominantly Cabernet Sauvignon, with small additions of Malbec and Merlot.

Hand-harvested and meticulously sorted, the wine was fermented using indigenous yeasts with a combination of whole-berry and crushed fruit. Only the free-run juice is used, aged for 22 months in fine-grain French oak, 63% new.

The result is a wine of precision and intensity, showing layers of blackcurrant, dark cherry and cassis, lifted by floral notes of violet and herbs. The palate is focused and refined, with pure dark fruit, finely integrated oak spice and silky, structured tannins. Powerful yet poised, it carries impressive freshness through to a long, persistent finish.

Drink now to 2035.

17.5+ JancisRobinson.com 'Dry growing season. Wet winter gave even budbreak. Uniform ripeness at harvest. Cooler February, so long hang-time; yet harvest was early. Very luxurious oak scent; pure vanilla, ripe cherry. Very fine tannins with polish and sculpture and poise. Glossy, well-made structure with evident and impeccable quality control. Doesn’t fall into the trap of overripe fruit, and there is proper persistence. There is a European sensibility here in the savoury finish, but the fruit purity does speak of the New World. Reminds me a lot of Penfolds Bin 389. Perhaps the only criticism is its perfection and sleekness; there are no rough edges, no hidden secrets – yet there is ageability that might unveil more.' (RH)
