Clonakilty is an Irish, family-owned distillery based on the country's southwest coast. In the distillery, the Scully family use barley grown on their own farm, which no doubt helps them to maintain their certified B Corp status. Maturation takes place in their warehouse right on the Atlantic, and this maritime influence most definitely plays a role in how the spirit develops, imparting a distinct salinity.
Their Port cask is like Christmas cake in a bottle. It's rich and fruity, with ripe red cherries and raisins on the nose, with orange citrus and vanilla. The finish is long, with spice and dark chocolate. This is their bestseller in Europe, and perfect for cold winter nights by the fire.
