Clonakilty is an Irish, family-owned distillery based on the country's southwest coast. In the distillery, the Scully family use barley grown on their own farm, which no doubt helps them to maintain their certified B Corp status. Maturation takes place in their warehouse right on the Atlantic, and this maritime influence most definitely plays a role in how the spirit develops, imparting a distinct salinity.
Their double cask has a delicious vanilla spice on the nose, with ginger and hazelnut on the palate. The finish is long and complex, with salted caramel really coming through. This is their top seller globally, and for good reason.
