Palomino

Named for King Ferdinand III, a Spanish king who conquered vast amounts of Andalucia, this bodega is actually now owned by a particularly passionate Norwegian called Jan Petterson. Together with a group of investors he expanded the old Bodegas Rey Ferdinand di Castillo and brought it into the modern age and into being one of the most exciting in the sherry world.
Yema is the first non-fortified Palomino to ever be released by Fernando de Castilla, a house which is best known for its exceptional Sherries. Sourced from old vines in Lomopardo, one of the highest, most inland vineyards of Jerez, this wine showcases what the grape can express without the influence of flor (the layer of yeast formed in the barrel that gives Fino styles of Sherry their distinctive flavour). Grown on Albariza soils and fermented at cool temperatures, the wine is then aged for six month on fine lees to build depth and texture. This versatile wine, which is drinking beautifully now, can be served alongside dishes such as grilled fish, tapas and white meats.
Bright pale yellow in the glass, with aromas of preserved lemon, golden apple and a touch of roasted nuts and honey. The palate is dry, savoury and structured, with good minerality and a long saline finish.
