Sylvain Dussort owns six hectares of land in and around the village of Meursault, of which approximately half are Bourgogne Blanc. The parcels of Bourgogne Blanc lie on the boundary of the Meursault appellation, and these wines are the speciality of the domaine, putting many a Meursault to shame. Sylvain harvests early, looking for elegant, mineral, terroir-driven wines. He ages them in his cold cellar for longer than most whites, and as a result, Sylvain's wines age exceptionally well in bottle.
The grapes are hand harvested and the wine is aged for 12 months in barrel on the lees. With similar characteristics to its "big brother" Meursault, it is delicate rich and elegant with a long length.
This is great as aperitif, and goes well with fish and poultry in white sauce.
