Barbadillo’s Saca Estacional Manzanilla is a seasonal expression of the winery’s Manzanilla Pasada, first introduced in 1999 and credited as the world’s first Manzanilla labelled En Rama. Unlike conventional bottlings, the Saca Estacional is released four times a year to reflect the changing seasons, allowing it to capture the subtle variations in flor growth influenced by temperature, humidity, and the environment of the Sanlúcar de Barrameda region - each release is a snapshot of a specific moment in the year, offering a rare glimpse into the living character of this exceptional Sherry.
Made from 100% Palomino grapes sourced from the Gibalbín and Santa Lucía pagos, the wine undergoes careful maturation under the flor, preserving freshness, brightness, and the delicate salinity that define a great Manzanilla. The Saca de Verano (Summer bottling) is drawn from hand-selected barrels in the El Potro Bodega, where winemaker Montse Molina personally chooses casks from the Pasada solera that best represent the warmth, sunlight, and unique conditions of the summer season. These casks, aged for an average of eight years with minimal filtration, produce a wine that is vibrant, nuanced, and distinctly expressive of both season and terroir.
The 2025 bottling is a wine of remarkable precision: vibrant and mineral-driven, with elegance and complexity. Its delicate aromas and lively palate make it the perfect pairing for seafood dishes like oysters and clams, or grilled fish with summer vegetables and delicate salads. The label is decorated with the Sea Bream, a nod to the Atlantic waters surrounding Sanlúcar and the winery’s connection to the Doñana wetlands.
