Antinori’s Cervaro della Sala 2019 is one of Italy’s great white wines, marrying Burgundian elegance with Umbrian character. First produced in 1985, it was a trailblazer for Italian whites, introducing barrique fermentation and aging, and it remains the flagship of Castello della Sala, Antinori’s medieval estate near Orvieto.
The blend is predominately Chardonnay, which brings structure, depth, and a creamy, Burgundian texture, plus a touch of Grechetto (never more than 10%) to add lift, freshness and minerality. The Chardonnay was fermented in barriques from September through February, and the Grechetto was vinified without malolactic fermentation.
The result is a stunning, age-worthy white with remarkable balance between richness and energy. The nose is layered with ripe apples, acacia blossom, tropical fruits, and a hint of honey, underscored by flinty, reductive notes. The palate is full-bodied and creamy yet with lively acidity, leading into a long, slightly toasty finish.
Already impressive, the 2019 has the structure to age gracefully until 2035, gaining even more depth and complexity with time in bottle. A wine of both power and finesse, it is a true benchmark of Italian winemaking. Perfect with lobster, scallops, or truffle pasta.
