Winemaker Gilles Remoriquet, at the helm of his family estate since the late 19th century, blends the best of traditional methods - horse-ploughing, small yields, hand-harvesting and barrel maturation - with forward-thinking innovation, often travelling across regions to pick up new techniques. Most recently, he went to the Jura to learn how to blend the best manure!
This wine is no run-of-the-mill Bourgogne Rouge, with its fruit drawn from vineyards in both Nuits-Saint-Georges and the Côte de Beaune. It offers bright and juicy red fruits and lovely spice. Vibrant and youthful now, it will gain further elegance if cellared for a year or two.
Serve slightly below room temperature. Pair with dishes that will have enough depth to match its structure, but won't overpower - roast duck breast with a cherry glaze, coq au vin, or a wild mushroom risotto.
