Finale is Pegasus Bay's deliciously botrytised dessert wine, crafted only in select vintages where conditions allow for the full development of noble rot. Sourced from low-yielding, old vines planted in the stony Glasnevin Gravels of North Canterbury's Waipara Valley, the fruit benefits from a long growing season characterised by warm days and cool nights, encouraging full ripening while preserving acidity.
Modelled on the great wines of Sauternes, Finale is a blend of Semillon and Sauvignon Blanc. Only the most botrytised, raisined bunches were hand-selected, gently pressed, and fermented separately in French oak barriques (50% new). The wines were blended only after 12 months of maturation on fine lees to add texture and complexity.
Golden in colour, the nose offers notes of dried apricot, lemon curd, ginger, and candied citrus peel, layered with honey, chamomile and baking spice. The palate is rich and decadent, with a luscious mouthfeel balanced by the acidity - Semillon lends weight, while Sauvignon brings lift. The finish is long and silky. Pair with cheeses and desserts.
