Riesling
75cl * 11% ABV * Waipara Valley, New Zealand
Crafted only in select vintages that allow for the development of noble botrytis, Aria is an opulent late-harvest Riesling made from hand-selected bunches with botrytis influence and concentrated natural sugars. Sourced from old vines grown in the stony Glasnevin Gravels of North Canterbury's Waipara Valley, the fruit benefits from long, cool nights and a dry autumn that extend ripening while preserving acidity.
Fermented slowly at low temperatures, the wine is richly expressive and retains a touch of natural spritz from the presence of carbon dioxide. It opens with a perfumed bouquet of honeysuckle, rose petal, orange blossom and citrus zest. The palate is lusciously textured, layering lemon curd and lime sherbet. There is lively acidity and underlying minerality that add to its balance and complexity, followed by a long, concentrated finish. A perfect dessert wine, pair with burnt Basque cheesecake with lemon curd and baked apricot.
