Pinot Noir

Like so much of the geology of Burgundy, Volnay is unique. It has a thin layer or red soil over chalk and stone. Les Santenots produces wines that are hailed as the most delicate of the Burgundian Pinot Noirs. The wines are characterised by a sap note and an aromatic bouquet. The wines have been judiciously aged for 18 months on oak from the Jadot cooperage. Notes of violet, gooseberry and cherry abound but this wine is showing a little age with spices and game savouriness. The palate is similar but the acidity is balanced but bright, meaning there is a freshness to the first sip right through to a warmth on the finish.
Although hailed as the most delicate of the Burgundian reds this wine is perfectly matched to pair with some great dishes. A delicate poultry dish like a Poussin or Quail are perfect but this wine can even stretch to the more unusual, try pairing with the Lyonnaise classic of a pike Quenelle Lyonnaise.
