This sherry was the first Manzanilla brand launched by Barbadillo in 1827. The iconic brand was resurrected in 2014 to launch this wine – Barbadillo’s finest Manzanilla. The striking warm yellow tin lid design comes from an authentic reproduction of a huge tiled wall mural in the bodega and the original 1827 brand advertising. The lady shown being the figurative embodiment of the pastoral countryside, the ‘Pastora’, or ‘shepherdess’, and is the only remaining trace of the original brand’s existence.
After six years in the solera system at Manzanilla Solear in Sanlúcar de Barrameda, the sherry is moved to La Pastora, where it’s aged for another couple of years before release. It is bottled En Rama, meaning ‘raw’, without fining or filtration. Bright gold in colour, this incredibly smooth and complex sherry still has a great freshness and energy. It makes for the perfect aperitif, but absolutely benefits from food to balance the blast of toasted hazelnuts, crisp green apple, salted butter, bitter herbs, chamomile tea and dry Madeira on the palate.
Pastora is an excellent accompaniment for tapas, and salty nibbles like anchovies or almonds.
