Crafted by a third generation family of rum blenders in Colombia, with rums from Trinidad, the Dominican Republic, Venezuela, and Panama, Idle Assembly is a tour of the Caribbean in a bottle!
A premium blend of rums which have been aged in ex-bourbon, white oak barrels for between 5 and 20 years. The bottle celebrates a time when rum of the islands was decanted into the most commonly available vessel - the standard whisky bottle. Intentionally designed to hark back to the hey-day of the 50s and 60s, when some of the most glamorous island travel was opened up by seaplanes, Idle Assembly's label reflects an illustration of coming in to land between the reef and a palm lined beach.
Delicate aromas of ginger and orange blossom blend with toasted coconut and an added depth of oak spices, bergamot and sandalwood. With time in the glass, Medjool dates and a hint of white chocolate and a lightly floral overtone backed by Palo Santo wood develop. The palate gives an initial note of Maraschino cherries, orange sherbet and clove. Some light toffee notes appear, supported by a backbone of nutmeg, cinnamon and Madagascan vanilla. Rose water, fig leaf and light honey notes complete the complex profile of this delicious rum. The finish has a light biscuit note, ripe banana, cocoa nibs, liquorice and cigar tobacco, with a hint of toasted almonds and cherry Bakewell tart.
Serve on its own or simply over ice, although this rum also makes mixed drinks and even the most flamboyant cocktail taste better.
