Fourth generation from a family of vine-growers, Bernard Defaix began making wine on 2 hectares of land in 1959. At this time, the newly discovered technique of protecting the vineyards from spring frosts circulated throughout the wine industry bringing a previously unknown stability to winegrowing. Through passion and tireless efforts, Bernard and his wife Monique gradually acquired plots in the Chablis Premier Cru (Côte de Lechet, Vaillons and Lys), Chablis and Petit Chablis appellations over time. Domaine Bernard Defaix now has 27 hectares of vineyards, and for the past 20 or so years has been managed by Bernard and Monique's sons Sylvain and Didier. 

Domaine Bernard Defaix follows an organic, ecological, and sustainable system of farming and agriculture. This wine is aged in stainless steel tanks on its fine lees with natural yeasts so as to respect the typicity of the appellation. The lees are regularly moved around during the six first months of maturation then the wine bottled 10 to 12 months after the harvest. Defaix Chablis are characterised by their freshness, power and tenacity. Their bouquet displays a dominance of mineral notes, which are often associated with delicate touches of lemon and grapefruit.

Didier Defaix enthusiastically described 2022 as a “great vintage" that gave both "excellent quantities and quality, which is a rare combination." He describes the white wines of this vintage as having "nice balance, and a great structure".

Made for drinking when young, this wine can be enjoyed until 2026. It makes an excellent match for seafood or fish.
