Famille Paquet Mâcon Villages 'Nos Cinq Terroirs' (Our Five Terroirs) is an ode to the merging of estates across the Mâcon-Villages, Saint-Véran and Pouilly-Fuissé appellations that began with Jocelyne and Michel Paquet in 1980. Now in its second generation, son Camille manages the vineyards and winemaking, while sons Mathieu & Jean-Baptiste are responsible for the marketing and sale of the wines.

The new generation are working hard to preserve the family history while continually developing a less interventionist approach to winemaking, and 2021 marked the first certified organic vintage. Keen observers of the rhythms of nature, each of the estates 50 plots are managed according to its individual needs with only local organic and biodynamic compost to enrich the microbial life of the soil, and each phase of the production process is carefully monitored by Camille. The 2022 vintage magnums were bottled in a descending moon phase, fruit day, on January 18th 2023.

The terroir here is wonderful for Chardonnay, producing very expressive, mineral, floral wines with a great deal of fruit. Natural yeast is used in the winery to allow the grape and the terroir to express themselves. On the nose there is acacia honey, citrus, yellow fruits, marzipan and white flowers. Rich, round, powerful and structured, the palate is well-balanced, combining freshness and fleshiness, followed by a saline finish. This makes it not only an ideal aperitif, but also an excellent accompaniment to shellfish such as scallops, fish in creamy sauce, veal, poultry, sushi, risotto, and hard cheeses.

Remove from the fridge an hour before serving (13°C) to fully appreciate the complexity of flavours, and if you can wait, this wine will continue to develop in the bottle if kept under cellar conditions for up to 10 years.
