Famille Paquet is a 30 hectare property located in the village of Davayé, in the Mâconnais. First created in 1980 by Jocelyne and Michel Paquet under the name Domaine des Valanges, it is now run by their three sons Jean-Baptiste, Mathieu and Camille. Keen observers of the rhythms of nature, the Paquets manage each of their 50 plots according to its individual needs with only local organic and biodynamic compost to enrich the microbial life of the soil, and each phase of the production process is carefully monitored by Camille. The new generation is working hard to preserve the family history while continually developing a less interventionist approach to winemaking, and 2021 marked the first certified organic vintage.

Only natural yeast is used in the winery to allow the grape and the terroir to express themselves, while malolactic fermentation followed by 12 months of French oak aging have been used delicately to add extra complexity. Aromas of luscious honey and citrus are echoed on the palate along with hints of white pepper, freshly-whipped butter and a delicious but persistent citrus finish. Round, rich, fresh and well-balanced this is a subtle blend between the minerality of terroir and the maturity of the grapes.

This Saint-Véran goes perfectly with white meats, cheeses from goats, creamy dishes, and faux gras.

Remove from the fridge an hour before serving (ideal temperature 13°C) to fully appreciate the complexity of flavours, and if you can wait, this wine will continue to develop in the bottle if kept under cellar conditions for up to 10 years.
