Xarel·lo, Macabeo and Parellada
75cl * Organic * 12% ABV * Cava, Spain
The grapes are certified organic and hand-harvested from Juvé’s three estates; Espiells, Mediona, and La Cuscona, in the best areas of the Mediterranean Penedès region, close to Barcelona. Their Brut Nature Reserva de la Familia cava has a typically pale golden colour, tiny, persistant bubbles and a rich, elegant nose of ripe white fruit such as apple and Ercolina pears. The palate is creamy and full of toasty notes thanks to the 36 months it has spent aging on its lees. The wine lingers on the palate with a ripe fruit finish.
Perfect with acorn-fed Iberian hams, it is also an excellent counterpoint to a vichyssoise with toasted almonds, suckling pig with apple purée or a Camembert tart with walnuts.

"An appealing and classically Cava nose is mocha and thyme-led. Lovely honeyed Xarel.lo fruit, beautifully fine mousse: a most elegant Cava. Nice backbone and comes across as quite dry with a savoury, lipsmacking finish that lingers.
