Domaine Billaud-Simon is renowned for owning some of the best vineyards and producing some of the highest-quality wines in Chablis, long recognised for their steely, mineral style.
Most of the domaine's wines see no oak at all, apart from its Premier and Grand Cru parcels. This, the 'Tete d'Or', is the ambassador of the domaine, produced from the most prestigious parcels in the village, right next door to the Premiers and Grands Crus. More generous than entry-level Chablis, with a nose of baked apples, warm spices, white blossom and vanilla custard. Rich and crowd-pleasing, and just the thing for grilled lemon sole or scallops in beurre noisette. Serve between 10-12°C.
