Palomino
75cl * 17.5% ABV * Sanlucar, Spain
This off-dry Sherry begins its life as a classic Manzanilla, aged under flor in Barbadillo's seaside bodegas of Sanlúcar, before the flor is allowed to die away, exposing the wine to gentle oxidation. The result is a Sherry of deep topaz colour and remarkable complexity, combining the salty tang of Manzanilla with roasted almonds and hazelnuts. A touch of Pedro Ximénez is added to round the edges and lend a subtle raisined sweetness.
This is a versatile partner at the table, perfect with soups, stews, mushroom risotto, aged cheeses, or even just a handful of toasted nuts. Equally, it makes a great aperitif, served slightly chilled.
