Sylvain Dussort owns six hectares of land in and around the village of Meursault, of which approximately half are Bourgogne Blanc. The parcels of Bourgogne Blanc lie on the boundary of the Meursault appellation, and these wines are the speciality of the Domaine, putting many a Meursault to shame. Sylvain harvests early, looking for elegant, mineral, terroir-driven wines. He ages then in his cold cellar for longer than most whites, and as a result, Sylvain's wines age exceptionally well in bottle.
When young, this Meursault evokes ripe grapes, with green, floral aromas. After several years in bottle, it becomes rich and smooth, whilst retaining a freshness, with notes of honey and hazelnut. This wine accompanies foie gras, shellfish grilled or in sauce, white meats, as well as so cheeses. The wine can be laid down for up to a decade if you like the richer flavours.
