Unsweetened Bajan rum from the Foursquare Distillery - one of the oldest houses on Barbados and a previous winner of Rum Producer of the Year. Aged for at least six years, it is finished in old Oloroso sherry casks before bottling to give it an extra helping of dark chocolate and sweet spice. Smooth as silk, it would make a nice change from whisky in an Old Fashioned: 2 parts rum, 1/2 tsp sugar and 3 dashes bitters.
