Each night, without fail, winemaker Paul-Henry slips down to the cellar to check on his wines, making small adjustments here and there. It is remarkable then that he produces roughly one-quarter of all the wines in the Menetou-Salon with such dedication. This shows a fleshy, fruit-forward character reminiscent of lime juice and blackcurrant leaf. Drink alongside cod served in a creamy herb-flecked sauce.
