Founded in 2002, Vina Tabali is a pioneering winery in Chile’s Limari Valley, where the desert meets the Pacific. Crafted from the Viognier grown on these limestone-rich slopes, this wine strikes the perfect balance between ripeness and minerality.
The grapes were whole-bunch pressed and fermented at cool temperatures to preserve the purity of fruit and maintain natural acidity. Following fermentation, the wine rested in stainless steel to enhance texture and freshness.
The result is a bright and expressive wine: the nose opens with aromas of citrus zest, orange blossom, and white peach, layered with notes of apricot, candied fruit, and floral honey. On the palate, it is vibrant and textural, combining ripe stone fruit and subtle tropical tones with a distinctive chalky minerality that speaks to Limarí’s cool coastal influence. The finish is long, clean, and delicately spiced, with excellent balance between richness and freshness.
The winery itself is a feat of both architecture and sustainability. Built discreetly into a ravine, it all but disappears into its surroundings – a deliberate design that both preserves the beauty of the desert terrain and protects the building from heat. Its award-winning roof, shaped like an inverted aircraft wing, captures to cool pacific air and channels it through the fermentation cellars below. This naturally regulates temperatures, thus eliminating the need for any artificial cooling despite the desert heat.
Serve sightly chilled, paired with seared scallops, grilled langoustine or seabass in ginger. Also brilliant with aromatic Asian dishes like Thai food.
