Palomino Fino
375cl * 15% ABV * Jerez, Spain
Bodegas Lustau was established in 1896 and was initially what the Spanish would call an almacenista, or warehouse-style bodega, i.e. it made and aged its own sherries for selling to local, or its own, bars and shops. As the bodega grew, it started selling its sherries to larger producers and then, by the 1930s expanded into exporting its, and other small family-owned producers' wines. It's now one of the most well-known companies in Jerez, and of course, in the world of sherry.
This fino sherry is aged in American oak casks through the traditional solera method in Lustau's wineries in El Puerto de Santa María, a seaside town situated in 'the sherry triangle' (which is the area in Cadiz in south west Spain between El Puerto, Sanlúcar de Barrameda and Jerez). The wine is pale yellow, with a fresh, vibrant nose, reminiscent of yeast, leading to a dry and mouth-watering palate. Serve cold as a deliciously refreshing accompaniment to green olives and almonds on a hot day.
