J.M. Boillot is the grandson of Etienne Sauzet, and was previously winemaker for Leflaive, so you can be sure that he knows his stuff. He set up his own domaine in 1985 and vinifies all his whites the same way: whole-bunch pressed, settled for 24 hours, lees-stirred once a week and bottled before the next harvest.
This is a fantastic Bourgogne Blanc. It's fruit is mostly sourced in Puligny- Montrachet and Volnay and its quality come through. There is a refreshing minerality that one would associate with Puligny but also the unctuous richness and vanilla that comes with aging in some new oak. But only 25% of the wine has seen new oak so it's balanced and integrated, allowing the fruit to really come forward too. This is a wonderful example of the quality of Chardonnay production in the Cote de Beaune.
