Pegasus Bay is a family-owned winery in the Waipara Valley, North Canterbury. The founder Ivan Donaldson planted the first vineyard in 1976 and went on to establish the brand a decade later with his wife Christine. Traditional Burgundian winemaking techniques are used to create this rich and fruity, which oozes some very pretty notes of black cherry, chocolate, sweet cherry and spice. The nose is layered and complex, with earthy notes of undergrowth, woodsmoke, truffle and pot pourri juxtaposed against dark cherry, cranberry, crushed lavender, and hints of clove. Powerful and seductive in the Morey-Saint-Denis style. Indulgently soft and round on the palate, it is ready to drink on release, but will reward carefully cellar for up to 5 years. Pair with duck breast in a cherry sauce.
