One of the best value sparkling wine regions, Cava manages to hit the spot when you fancy richer, drier bubbles than Prosecco. Conscientiously made from a blend of indigenous Spanish varieties - Xarello, Macabeo and Parellada - and made using the 'traditional' (Champagne) method, this is fresh and quaffable. Poised and peachy, it would be a good catchall for assorted tapas or even a seafood paella.
