However, a mouthful of this competitively priced Pinot Noir will actually give you red fruit and jam on the palate with nicely balanced tannins and acid - the foundations of a serious Pinot Noir.
Grapes are sourced from the wild, rugged landscape of Pays Cathare that surrounds the towns of Carcassonne and Limoux with its argilo–calcaire sub strata. One of the great advantages of the region is that it benefits from enviable geographic and climatic conditions, allying the warm Mediterranean sunshine that is tempered by the altitude and the cooler nights so characteristic of the foothills of the Pyrenees. These are ideal conditions and allow for the longer, slower ripening of the grapes, providing wines that offer intensity, complexity and finesse. There is potential to cellar and age this wine.
Delicious both with and without food; try with a herby sausage casserole, grilled lamb or pea and ham soup. Don't serve too warm!
