The ‘Classico’ designation indicates that Ormanni’s vineyards lie in the oldest and most authentic part of Tuscany (unsurprising as the Ormanii family have owned this since the 13th century). The emblem of Chianti Classico is the black rooster, or gallo nero. It relates to a legend told about the use of roosters to settle a border dispute between the warring provinces of Sienna and Florence. The black cockerel was the symbol of Florence, while the white cockerel represented Sienna. It’s clear who dominated that contest.

This is Chianti as it should be: intensely fragrant aromas of cherry, raspberry, leather and tarragon are backed up by underlying fresh acidity and dry, muscular tannins that make their presence felt. A world apart from the straw wrapped “fiasco” bottles we thought to be a classy drinking when students!

Aged for 12 months in large oak barrels, as per the requirements of the DOCG. Formed in 1984, post the breakaway of the Super Tuscans in the 1970s, the DOCG was intended to reflect modern high-quality wine making techniques to revitalise a region that had become known for producing underwhelming wines (see mention of straw-clad bottles, above!)

Allow this wine to soften with time in the cellar or in its youth match it with cured meats, pasta, stewed and grilled meat and Tuscan cheese… or there is always the recommendation of a certain Dr Lecter who liked it with “liver and fava beans.”*

*Actually this was a medical in-joke as these would all have been prohibited foods for Hannibal Lecter if he had been taking his anti-psychotic medication, as they would have reacted with it.
