J.M. Boillot is a grandsdon of Etienne Sauzet and was previously winemaker for Leflaive, so you can be sure that he knows his stuff. He set up his own domaine in 1985 and vinifies all his whites the same way: whole-bunch pressed, settled for 24 hours, lees-stirred once a week and bottled before the next harvest.
Full and fruity Montagny from Premier Cru vineyards, showing delicate stone fruit, vibrant grapefruit zest, honeysuckle and good weight on the palate. This is a gourmet wine with body and structure, a floral nuance and lemony-freshness. The palate is pleasantly smooth and creamy, a touch of oaky richness adds depth and there is a chalky mineral persistence on the finish.
Drink to 2025+ with dover sole or pan-fried turbot in a butter sauce.
