From the heart of North Canterbury's Waipara Valley, Pegasus Bay is the result of over four decades of passion and expertise from the Donaldson family. Their wine comes from old, low-yielding vines grown in the Glasnevin Gravels of North Canterbury's Waipara Valley.
The dry, warm growing season for the 2021 Sauvignon Blanc delivered small, concentrated berries, harvested in stages to capture a broad range of aromas and textures. The wine was fermented mostly in stainless steel to preserve freshness, with a portion whole-bunch fermented with extended skin contact for added depth. A small amount of barrel-aged Semillon was added to the blend, bringing richness and texture.
The result is a complex wine with a pale lemon hue and vibrant bouquet of passionfruit, pineapple, grapefruit and green apple, with notes of lemon peel and gunflint. The palate is layered and textural, with lively acidity, drive and length. Intense yet well-balanced, this is a serious Sauvignon Blanc.
