This is made at the beautiful Babylonstoren estate, which garden and fine food afficionados may well have heard about as it has the most stunning kitchen, medicinal and flower gardens as well as a farm shop selling estate-pressed olive oil. This complex, full-bodied red wine is a stellar wine fit for any celebration. Beautifully balanced flavours are complemented with a long and satisfying finish, making the Cabernet Sauvignon a favourite for slow sipping.
Rich, dark berry fruit at its core and a savoury edge of wild herbs, graphite and cedar. The wine is dense and brooding with plump blackcurrant fruit moderated by a backbone of fine-grained, grippy tannins, creating lovely tension and succulence. Beautifully balanced and stylish with classic cultivar expression; the savoury finish is long and satisfying.
Perfect with ribeye steak, grilled or slow cooked lamb with rosemary and thyme, braised beef short rib, chargrilled cheese burgers, mature cheddar and gouda, creamy blue such as gorgonzola. Serve at room temperature (16–18°C).
