Patrick Javillier is widely regarded as one of Meursault’s best producers. A perfectionist, who studies both the art and the science behind the very best winemaking in the most intricate detail, it is hard to find a better expression of the terroir anywhere else. His Oligocene comes from a Bourgogne Blanc section, but is effectively on the same soil as the Meursault level vines immediately next to them. Not bearing the appellation status, the price is considerably more favourable and so we highly recommend getting your hands on this mature parcel! Now golden in colour and developed in the glass. You’ll find characters of oatmeal, caramelised pastry, yeasty, bready notes and a little lemon zesty acidity to tie it all together!
We recommend devouring this alongside some roast chicken in a rich, creamy sauce or perhaps go down the seafood route and let it thoroughly enhance your lobster risotto or grilled swordfish.
