Pinot Noir

Prior to 2009, when he took over his grandfather’s estate in Santenay, David had worked with Pinot Noir extensively, both at Domaine de la Romanee Conti in Burgundy, but also in Nelson, New Zealand for the utterly inspiring Finn family at Neudorf. These days all of David’s vineyards are down in Santenay and Maranges in the southern end of the Cote de Beaune where the pinot noir grape exhibits lots of darker, brambly fruits and complex spices. ‘Cuvee S’ refers to Simone, the name of his grandmother, who was also from the village of Santenay.
Being that little bit heavier and fuller than many other Burgundies, you could pair this with a slightly more robust dish - it would work with a fragrant, spicy lamb tagine, or if keeping with its local cuisine, we’d go for an irresistibly ripe Epoisses cheese and some fresh crusty bread.
