Roger Goulart is located in Sant Esteve Sesrovires, a little village in the Alt Penedès region, where they have 20 hectares of vines. The predominant grape is the local Xarel.lo. The Xarel.lo is indigenous from the Penedès, and it is the main varietal in the blend. It's a grape capable of making wines with excellent structure and thus allowing them to be aged in the cellar too.
Alongside the Xarel.lo, Roger Goulart use Macabeo and Parellada, and each variety is vinified separately before blending. This is a sparkling wine with great intensity of ripe white stoned fruit and wonderful complexity from five years ageing on its lees. Good acidity provides a refreshing and lasting finish.
Enjoy this Cava with roasted white meat, fish and shellfish or as an apéritif with artichoke hearts.
