Semillon, Sauvignon Blanc
75cl * 13.5% ABV * Waipara Valley, New Zealand
The Pegasus Bay vineyard was established in 1986 by Ivan and Christine Donaldson. Today their four sons help run the business and maintain its high reputation. It's regarded as one of New Zealand's top five producers by wine critic Robert Parker.
With a mix of 70% Sauvignon Blanc and 30% Semillon this is a classic white Bordeaux blend. The majority of Sauvignon was fermented in stainless steel to maintain the pure fruit character and all of the Semillon in oak puncheons to add texture. Both varieties were aged on their natural deposits of yeast lees (sur lie) for approximately 10 months, prior to blending. Once bottled, the wine was left to age for another year before release, allowing it to integrate further.
A delicious, fresh white wine which can be enjoyed on its own or with salads and light meals.
