Sauvignon Blanc, Chardonnay

This Sauvignon Blanc and Chardonnay blend comes from a 21 hectare vineyard between Chambord and Cheverny castles. Though not certified organic, Benoit Daridan, who took over the family estate (he's the seventh generation to do so) in 2001 believes in sustainable farming and is passionate about his terroir. This results in a wine that's light, yet with hints of exotic fruits on the nose and palate.
80% Sauvignon Blanc is blended with 20% Chardonnay to produce a very similar style of Sauvignon to Sancerre and Pouilly Fumé. There's a delightful fruity explosion from the Sauvignon and the blending with the Chardonnay softens the edges providing a good level of complexity.
The vines are harvested and then vinified separately, before blending. Following Benoit's belief in natural and sustainable farming, the fermentation is done according to traditional methods, ie using native yeast (natural yeast from the grapes). In fact, the malolactic fermentation is either completely or partially a natural process, depending on the vintage.
Pair with a goats' cheese and caramelised-onion frittata with a lemony green salad.
