Champagne Lallier has been firmly rooted in the (Grand Cru) village of Ay since 1906. At the end of the 20th century, the house underwent some serious modernisation and refurbishment, as well as recruiting a consultant who had worked with some of the most prestigious houses in the region. This consultant - Francis Tribault - ended up buying the property, as it gave him the freedom to craft wine in the spirit of an artisan domaine. Francis aims to be as sustainable as possible and uses a lower level of sulphur dioxide than many of his rivals. This has some lovely complexity and finesse, showing citrussy notes on the palate that combine with toasty, bready character from lees ageing.
