Forget whatever you thought you knew about Lambrusco - this is the real deal. The best and most traditional Lambrusco is first and foremost dry and made via the traditional method i.e. the same sparkling wine method that is used to make Champagne. From a tiny 6 hectare estate in the foothills of the Apennines, this is wild and spicy, showing intense notes of fresh and dried red fruit - cherries and currants - and dried herbs. There's a touch of tannic grip that gives this the structure for ageing; something of a rarity with Lambrusco. Gloriously frothy. Enjoy with a plate of salami for a next-to-perfect food and wine pairing experience.
