Seven of Hearts is the love child of Byron and Dana Dooley, who were enamoured with the Willamette area when they first moved to Oregon in the 1980s. As well as making some rather fine Pinot Noirs, Byron has created this ice wine lookalike. Whole bunches of grapes are sourced from the Hope Well Vineyard, after which they are frozen for four to five weeks. The resulting concentrated juice is fermented to produce an aromatic and concentrated sweet wine, rich with apricot and honey, but balanced by some bright acidity to off-set the wine's natural sweetness. Pair with peach crumble or blue cheeses.
