The Sauvignon Blanc grapes used in this wine come from three excellent sites across the Leyda and San Antonio regions within Chile. Fresh coastal breezes from the Pacific Ocean ensure that the grapes ripe slowly and evenly, without overheating. The aim here is to preserve the crunchy, bright fruit and maintain their sense of freshness. Cool fermentation, followed by a short time on the lees add mouth-filling texture and depth. Think pink grapefruit and peach mixed with a herbacious nettly character. Zesty; the perfect foil for spankingly fresh seafood - oysters, crevettes or clams - on a warm summer evening.
