One of the Loire Valley's most lauded producers, Florent Baumard is something of an enfant terrible winemaker and has become known for his minimal interventionist approach. This sparkling wine, however, is a bit more straight-laced: crisp and refeshing, this has lovely mineral aromas with an apple and peach character on the nose and lemon and pink grapefruit on the palate. Elegant and biscuity, with plenty of crisp acidity this is an ideal aperitif - and, indeed, rather good with goats cheese crostini.
