The Domaine Boutinot vineyards over-look the town of Cairanne from the north and benefit from their location, by harnessing the warm Rhone sunshine as it crosses the sky. The vineyard is full of low yielding old vines that produce deep coloured, concentrated fruit.
Hand-harvested, and fermented using naturally occurring yeasts, the wine rests on its skins in large open wooden vats. After this the wine is placed into French oak demi-muids and aged for 24 months. The wine is neither fined or filtered.
This wine is a pleasure with some youthful characters of red and black fruit but it is slowly maturing in bottle into something rich and silky. It has characteristics of mocha, dried black fruits and flavours of oak and black tea. A great expression of the Southern Rhone GSM blend.
The wine will pair beautifully with saucisson and lentils, as well as pairing with a ratatouille. Also delicious on its own.
