Palomino
75cl * 19.5% ABV * Jerez, Spain
With an average Solera age of over 20 years, this is technically classified as a 'Very Old Sherry'. Amontillados spend 8 years as a Manzanilla (aged under flor) and then fortified a second time before being aged in oxidatively for up to 7 years. Barbadillo have been making sherry since 1827, so know a thing or two... A deep amber colour in the glass, it has complex, inviting aromas of toasted hazelnut, brandy, sea salt and zesty citrus notes. Lightly herbal and slightly oily in texture, it has long been recognised as a favourite among the wine trade.
