J.M. Boillot is the grandson of Etienne Sauzet, and was previously winemaker for Leflaive, so you can be sure that he knows his stuff. He set up his own domaine in 1985 and vinifies all his whites the same way: whole-bunch pressed, settled for 24 hours, lees-stirred once a week and bottled before the next harvest.
The result is an outstanding village level Puligny-Montrachet; expressive and concentrated with a refreshing, mineral backbone. The nose offers apples, lively ripe citrus, delicate stone fruits and white flowers, accompanied by creamy butter and nutty notes. Then hints of white pepper along with pithy grapefruit join the fun on the palate, plus an added mineral note that sees us through to the long finish. Drinking well now but will easily keep for the next decade.
