J.M. Boillot is a grandsdon of Etienne Sauzet and was previously winemaker for Leflaive, so you can be sure that he knows his stuff. He set up his own domaine in 1985 and vinifies all his whites the same way: whole-bunch pressed, settled for 24 hours, lees-stirred once a week and bottled before the next harvest. Pure, fresh and attractive, this is an expressive, concentrated wine with a refreshing, mineral backbone. Lively ripe citrus and yellow peach fruits on the nose combine with hints of acacia honey and white flowers. The palate is juicy and refreshing with a pithy grapefruit character and a zesty chalky, mineral note which runs through to the long finish. Hints of white pepper add further complexity. Very fresh and forward, with early drinking potential - so now, over the next decade.
