Like the Manzanilla from this Spanish bodega in Sanlucar de Barrameda, the dry Amontillado has a certain salinity on the nose and palate. It's a luxurious amber colour, and carries with it a hazelnut flavour alongside the saltiness. In general it has excellent structure and a long finish and is, traditionally, a match for artichokes, although it goes incredibly well with tuna ceviche too.
