A balanced fusion of dark red berry and chocolate flavours with a soft mouthfeel and juicy, lingering finish. This wine is made at the beautiful Babylonstoren estate, which garden and fine food afficionados may well have heard about as it has the most stunning kitchen, medicinal and flower gardens as well as a farm shop selling estate-pressed olive oil.
But back to the wine - each grape variety is harvested and fermented separately (skins on for seven days, maceration for a further week). The wines are pressed into French oak barrels - a third of the juice goes into new oak, while the rest finds a home in second and third fill barrels. The wine is then racked and matured for 12 months. This creates an intense dark red colour and a dry, full-bodied wine.
It's a wine that will age well for five years at least and goes perfectly with rack of lamb, lamb shank and beef.
