The estate comprises of 35 hectares of largely premier cru organically cultivated vineyards in 12 villages near Epernay in the South of the Champagne region.

Mandois is described in the Christie’s Encyclopedia of Champagne as producing “Elegant Champagnes which have a satisfying length of attractive creamy fruit… represtenting great value.” It was also descibed as "the Champagne house to watch" in this year’s pocket guide by the world’s best selling wine writer Hugh Johnson.

Although not a brand that everyone knows Pol Roger has always had many influential fans.

Churchill liked to drink his Pol Roger by the pint ( a size no longer made, sadly, but roughly equivalent to 50cl), and it is reckoned that in the last 10 years of his life, more than 500 cases of the stuff passed through his cellars. Of her father's fondness for Pol Roger, Churchill's daughter, Lady Soames, once said, "I saw him many times the better for it, but never the worse." The Germans even placed spies in Pol Roger as you could trace Churchill's planned movements around the UK by the shipments of Champagne for him!

Today it is the favourite Champagne of the Queen.

This great reverence is partly because it is the driest of the major non-vintage Champagnes and partly due to the soft wild strawberry Pinot Noir flavours but mainly because it has the finest most discreet mousse (smallest bubbles) of any Champagne, which is one of the key standards by which Champagne is judged.

Although no one quite understands how and why the bubbles in ‘Pol’ come out like this, it is widely believed to be due to their cellar’s being the deepest in Champagne and hence the coldest, the small bubbles being a by-product of the cooler aging.

Apart from Krug, Bollinger is one of the few Champagne houses to extensively use oak barrels when making their fizz, the reserve wines for which are between 5 & 10 years old. This makes the Champagne very distinctive - connoisseurs claim it has an aroma of apple crumble. The age of the reserve wines and the use of oak means it has a very rich palate with plenty of toasty-biscuit flavours that match food well as well as making the wine good to drink on its own.

When asked when she drank Champagne, Madame Lily Bollinger famously replied:

“I drink my Champagne when I’m happy and when I’m sad. Sometimes I drink it when I am alone. When I have company, I consider it obligatory. I trifle with it if I’m not hungry and drink it when I am. Otherwise I never touch it – unless I am thirsty”.
