Los Gansos (the geese) are a symbol of the many ways that Cono Sur is doing things the natural way. Together with a number of friendly insects, the wild geese help to keep the pests and parasites away from the vine, just as nature intended. This attention to detail during all aspects of the winemaking process ensures tha Cono Sur wines are full of fresh and vibrant fruit flavours. This single varietal Pinot Noir has rich notes of cherry, plum and strawberry that are enhanced by subtle smoky hints.

Made at one of the highest estates in Burgundy the owner of this estate, Laurent Metge-Toppin (nick-named the ‘Mange-Tout’) has been described as “The flying wine-maker working in the clouds of Beaujolais.” If he was English he would also be politely described as ‘slightly eccentric’ as when not working on his own estate Laurent also consults at the Siam winery in Thailand where they harvest using both elephants and punt-like boats in the drainage ditches to carry grapes back to the winery for processing! In Thailand the current wine-vintage is 2553 as they use the Buddhist calendar.

A lovely silky, soft, fruit driven Beaujolais, with aromas of violets (and a hint of banana) and redfruit laden palate. Great served lightly chilled.

We think that Falerio is almost too good to be true, given the amount of flavour you get for this price. Based on the Trebbiano grape with healthy splashes of other interesting local varieties Pecorino (just like the cheese) and Passerina. Floral on the nose with apple, lemon oil, lime, pear and faint herbal notes, the initial delicacy on the palate hides surprising body with a lovely freshness and an almond like finish. It’s ideal with white meats or fish, and pasta. Certified organic.

Tabali has only been around since 2003, but its wines received great accolades from the word go. The vineyard is in one of the northernmost (and hence theoretically warmest) regions in Chile, but this region's local 'Camanchaca' fog blankets the area each morning and afternoon coastal breezes bring cool air. Both help bring out the more delicate flavours in the fruit.

Made by rather more conventional methods this wine is left to ferment with its skins for three days before the now lightly tinted juice is separated from the colourful skins. This results in a delicately pale salmon -pink coloured rosé with blackberry and strawberry fruit aromas and more red berry and slightly plumy fruit on the palate. Best served chilled (8º-10º) as an aperitif. Unusually for a rose it will keep for a few years gaining a nice spicy roundness with time.

As well as being served as an aperitif the clean dry style and freshess of this wine and can be drunk with the local "cuisine lyonnaise" from the region it is made in (delicious but wickedly unhealthy cream and butter laden dishes) or some spicy oriental dishes.

Made organically from vines over thirty years old (older vines producing fewer but more concentrated grapes) this wine is a perennial favourite.

It is a very lightly oaked Chenin Blanc with a clean, creamy scent of dried apricots,almonds, pears, honey, mango and vanilla. Rich on the palate with hints of quince yet beautifully fresh.

From a vineyard immediately bordering the area of Chateauneuf-du-Pape's appellation, between the communes or Orange and Chateauneuf-du-Pape (all that separates this field and Chateauneuf-du-Pape is a main road.) Significantly it has the same Galet stones (large round potato sized pebbles) which give Chateauneuf its unique character as they absorb sunlight during the day and release heat at night bringing on the ripening of the grapes.

Beauchene isn't completely organic but practises "agriculture raisonnee", a philosophy of production that guarantees a top quality product whilst at the same time ensuring a better respect of the environment, through the use of traditional techniques; horse ploughing, hand harvesting and hand sorting by each grape-picker.

Deep ruby in colour with aromas of ripe red fruits and bilberries which continue as red fruit flavours on the palate that develop to hints of raspberries and blackcurrant.

Muscatel (Muscat) is one of the few grape varieties that actually makes a wine that tastes of grapes! These particular muscat grapes are so delicious that it has been noted that the rabbits that plague this vineyard pick on the Muscat, and will only eat the other grape varieties once the Muscat has been harvested! Quite light for a dessert wine it will match well with fruit tarts, meringue dishes and summer fruits.
